Growing up by the Mediterranean Sea had naturally filled my childhood summers with beach and watermelon memories. Living minutes away from the beach made almost every summer day a beach day. Someone would grab the towels the other would grab the watermelon and off we would walk to the beach.
Watermelon is such an amazing fruit! I am CRAZY about watermelon. Texture, taste, and juiciness …it just has it all! Tell me, who doesn’t love a HUGE guy who is sooooo sweet?

You will need:
Watermelon
Feta Cheese
Olive Oil
Balsamic Vinegar reduction
Coarse Pink Salt
Mint Leaves
Let’s do this!

Hello HUGE guy 🙂 Now, let’s see how sweet you are…
Start by cutting the watermelon into serving slices…
I like these triangle slices, but you can do what you like… cubes, mini balls …anything goes.
Feta is such a great cheese.
In this case, my preference is a Feta that has more moisture and that is a little more creamer. Israeli Feta is my absolute favorite!
Slice the Feta into thin slices.
Arrange the cheese slices between the watermelon ones…
Drizzle with just a little olive oil and a little balsamic reduction.
I used Fig balsamic vinegar reduction, it tastes great with the watermelon.

Pink Salt is just so right for this dish!
All that is left to do is to sprinkle with coarse pink salt and mint leaves.

Quick Recipe:
Watermelon Feta-
Slice the Watermelon.
Slice the Feta Cheese.
Combine the slices of Watermelon and Feta on a serving dish
Drizzle a little Olive Oil and Balsamic Vinegar reduction.
Top with Coarse Pink Salt and chopped Mint Leaves.
Serve immediately
